Ingredients:


2 cups flattened rice (pohe)


1 cup fresh coriander leaves


½ cup fresh mint leaves


2 green chillies


1-inch ginger


1 medium onion (finely chopped)


¼ cup peanuts


2 tsp oil


1 tsp mustard seeds


A pinch of asafoetida (hing)


½ tsp turmeric powder


Juice of 1 lemon


Salt to taste

Instructions:


Prepare the Green Masala: Blend coriander, mint, green chillies, and ginger into a smooth paste with a splash of water.


Wash and Soften Pohe: Rinse the flattened rice in water and drain. Let it sit for 5 minutes to soften.


Cook the Base: Heat oil in a pan, add mustard seeds, asafoetida, and turmeric. Sauté until fragrant.


Add Onions and Peanuts: Toss in the chopped onions and peanuts. Cook until the onions are golden and the peanuts are crisp.


Mix the Masala: Stir in the green masala paste and cook for 2–3 minutes until the raw aroma disappears.


Combine Pohe: Add the softened pohe to the pan, mix well, and adjust the salt. Cook for a couple of minutes on low heat.


Finish with Lemon Juice: Turn off the heat and drizzle with lemon juice. Garnish with coriander.
