Ingredients

For the Soup:

6 cups chicken broth

1 cup shredded cooked chicken

1/2 cup rice or orzo

1 medium onion, chopped

2 carrots, diced

2 celery stalks, diced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

For the Avgolemono (Egg-Lemon Sauce):

3 large eggs

1/4 cup fresh lemon juice (about 2 lemons)

1/4 cup hot broth (from the soup)

Instructions

Step 1: Prepare the Soup

1. Heat olive oil over medium heat. Toss in the onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.

2. Pour in the chicken broth and bring to a boil.

3. Add in the rice or orzo, along with the salt and pepper. Reduce the heat and let it simmer, stirring occasionally, until the rice is tender, about 15 minutes.

4. Stir in the shredded chicken and allow it to heat through before serving.

Step 2: Make the Avgolemono Sauce

1. In a medium bowl, whisk the eggs and lemon juice together until fully blended.

2. Slowly add the hot broth from the soup to the egg mixture, whisking constantly to gradually warm it up and prevent the eggs from scrambling.

Step 3: Combine and Serve

1. Gradually pour the avgolemono mixture back into the soup, stirring gently to mix everything together.
